Healthy chicken and vegetable stir-fry that’s perfect for lunch or dinner!
Quick and Easy Chicken and Vegetable Stir-Fry
Serves: 2 people
Time: 20 minutes
You’ll Need:
-10 ounces of chicken breast
-3 cloves of garlic
-1 shallot
-1 tablespoon soy sauce (I like to use low sodium soy sauce)
-1 tablespoon olive oil
-1 tablespoon sesame oil
-1 tablespoon Sambal Oelek (fresh ground chili paste used in many Asian dishes)
-5 ounces of snow peas
-5 ounces of sweet peppers (you can also substitute bell peppers)
-5 ounces of mushrooms
–green onions to garnish (optional)
Instructions:
1.) Make sure all your produce is washed and ready to use! Cut the snow peas in half and thinly slice the sweet peppers and mushrooms. Once everything is cut, set aside.
2.) Roughly chop the garlic and the shallot and set aside with the vegetables.
3.) Next, prepare your chicken by patting the breasts dry with a paper towel to get rid of any unnecessary liquid. Cut the breasts into 1-inch cubes and season with salt, pepper, and garlic powder.
4.) On a medium-sized pan, heat the olive oil until hot. Once the pan is ready, add the chicken breast cubes. Cook until they are nicely browned and cooked all the way through (~6 minutes). Place in a bowl and set aside for now.
5.) Drizzle the sesame oil onto the same pan and wait for it to heat up. Once the oil is hot, add the vegetable combination (snow peas, mushrooms, peppers, garlic, and shallot). Saute for 3 minutes until the vegetables begin to soften.
6.) Add the soy sauce and the sambal oelek into the pan and stir. Toss in your cubed chicken and mix evenly.
7.) Serve on top of your favorite rice or quinoa! Garnish with chopped green onions for some extra flavor and freshness if you would like. Enjoy!
