Mediterranean-Inspired Salad
Ingredients
For the salad:
- 3 persian cucumbers sliced into half circles
- 1 red bell pepper sliced
- 10 oz yellow cherry tomatoes cut into halves
- ⅓ red onion sliced
- 1 bunch parsley minced
For the dressing:
- 3 tbsp olive oil
- 3 white vinegar
- 1 lemon juiced
- 1 tsp Dijon mustard
- ¾ tsp salt
- ½ tsp black pepper
- ¼ tsp dried parsley flakes
Instructions
- Combine all the salad ingredients in a large bowl. Toss until all of the ingredients are thoroughly combined.
- In another medium-sized bowl, mix all of the salad dressing ingredients together until the mixture is smooth and homogenous.
- Pour dressing into the large salad bowl and toss until all ingredients are nicely coated. Enjoy!
