–Chia seeds
-Milk of choice
-Sweetener of choice (You can use maple syrup, zero-calorie sweeteners, honey, agave, white sugar, it’s really your choice!)

Is chia seed pudding healthy?
Chia seeds are a great source of fiber and omega-3 fatty acids! They can help with digestive health and keeping your heart in good shape (Chia Seeds 101: Nutrition Facts and Health Benefits)
To add to that, they’re also a great source of protein and antioxidants!
This recipe calls for using plant-based milk of your choice. I opted for macadamia milk but you are welcome to use any type that you like. With any type of milk you choose, you will also get a good source of Vitamin D and calcium!
With a simple list of ingredients, this recipe is great as a healthy snack or breakfast! Top with your favorite fruit or granola to keep you satisfied longer.
Chia seeds are a bit more calorically dense than some other foods, so I would recommend eating chia seeds in moderation. If you are looking to keep the calories down even more in this recipe, I like to use sugar replacements like these SweetLeaf Sweet Drops that are made with Stevia! It’s a zero-calorie sweetener that works great in anything that needs a bit of sweetness without the calories.

Healthy Matcha Chia Seed Pudding
Ingredients
- 1¼ cup plant-based milk I used unsweetened vanilla macadamia milk
- ⅓ cup chia seeds
- 1 tsp matcha powder
- 1 tsp sweetener of choice I used Sweetleaf Sweetdrops
Instructions
- Whisk the matcha powder with the milk in a bowl until there are no clumps and the mixture is smooth. If you aren't in a rush, you can also sift the matcha powder to make it easier to whisk.
- Add in your chia seeds and your sweetener and mix until everything is well-combined.
- Cover the bowl in plastic wrap and chill in the fridge overnight or for at least 2 hours.
- After at least 2 hours, the chia seeds should have formed a pudding-like consistentcy. Serve with fruit, granola, or toppings of choice. Enjoy!
