This recipe is crunchy, savory, and packed with so much flavor! What I love best is that this dish can be whipped up SUPER quickly, and it’s great for busy weekday dinners.

What is panko?
Panko breadcrumbs are Japanese-style breadcrumbs that are light, airy, and crunchy. They are crispier and lighter than other breadcrumbs because they don’t absorb as much oil as other breadcrumbs.
Authentic Panko breadcrumbs are made from a special type of white bread sans crusts.
Where can I buy/find panko breadcrumbs?
Panko breadcrumbs have become increasingly popular with numerous dishes, and panko breadcrumbs can be commonly found in the Asian section of most large grocery stores!
You can also buy them online if you can’t find them in your local grocery stores! Kikkoman Panko Breadcrumbs are my go-to when it comes to panko, and you can find the link to buy them here:

What kind of salmon should I use?
For this recipe, I used wild salmon, but you can most definitely use farm-raised as well.
Farm-raised salmon is much fattier than wild-caught salmon, so if you are trying to watch the number of fats (especially saturated fats) you consume, you may be better off using wild-caught salmon over farm-raised.
Compared to farm-raised salmon, wild-caught salmon is also higher in minerals such as zinc, potassium, and iron, which is another great plus to choosing wild salmon.

Do I need to cut the ends of my string beans?
Not a necessary step, but I like cutting the ends of my string beans to give them a cleaner look and to remove the weird stringy things at the ends. If you’re in a real-time crunch, feel free to omit that step!

Panko Crusted Salmon with Sautéed Garlic String Beans
Ingredients
For the salmon:
- 1 lb salmon
- 1 tbsp yellow curry paste
- 1 tbsp mayonnaise
- ½ cup panko breadcrumbs
- cooking spray
For the sautéed garlic string beans:
- 20 oz string beans
- 1½ tbsp vegetable oil
- 1 shallot minced
- 4 cloves garlic minced
- 2 tbsp oyster sauce
- 2 tbsp water
- black pepper
- sesame seeds optional
Instructions
- Preheat the oven to 450° Fahrenheit and line a baking sheet with foil. Spray the foil with some cooking spray to avoid the salmon from sticking.
- Mix together the yellow curry paste and the mayonnaise together in a small bowl. Then, cut the salmon fillet into 5 equal pieces. Lightly glaze the salmon pieces with the curry mayo mixture until the tops are all covered.
- Next, generously top the salmon with the panko breadcrumbs and bake in the oven for 12-13 minutes. After 12-13 minutes in the oven, the salmon should be perfectly baked with golden brown panko breadcrumbs on top.
- While the salmon is baking in the oven, wash your string beans and cut the ends off. Set them aside in a large, microwave-safe bowl. Microwave the string beans for 3 minutes in order to soften them before sauteing.
- In a wok, heat up the vegetable oil on high heat. Once the oil is hot, add in your minced garlic and shallots and cook for about 30 seconds. Add in your trimmed string beans and mix to incorporate the garlic and shallots with the string beans.
- Cook for about 2 minutes, and then add in your oyster sauce. Mix to ensure all the beans are coated. Cook for another minute, then add in the 2 tablespoons of water. Saute for one more minute.
- If desired, garnish your garlic string beans with some sesame seeds and serve alongside the panko crusted salmon. Enjoy!
