Easy, healthy matcha latte made with fresh blueberry syrup!
Iced Blueberry Matcha Latte
A simple, iced matcha latte paired with a fresh blueberry syrup!
Servings: 2
Ingredients
For the blueberry syrup:
- ½ cup fresh blueberries
- 2 tbsp sweetener of choice I used Swerve sweetener
- 2 tbsp water
For the matcha:
- 2 tsp matcha powder
- 6 tbsp hot water
- 1 tsp sweetener of choice I used Swerve sweetener
- 2 cup milk of choice
Instructions
- In a bowl, crush the blueberries with a pestle. You can also pulse them in a blender or food processor.
- Add the crushed blueberries to a small pot with the sweetener and water. Reduce over medium heat for about 5 minutes. The mixture should be thick and dark blue. Set aside in a container and allow to cool completely.
- Whisk your matcha powder with hot water until the mixture is completely smooth with no clumps. You can also use a hand frother if you have one. Then, add in your sweetener.
- Prepare two cups with ice. Divide the cooled blueberry syrup mixture into the two cups, followed by your choice of milk, and finish off with the matcha mixture. (Note: If you prefer a smoother blueberry syrup, you can strain it so that the blueberry skin does not get into your drink. However, I like to keep it in for fiber and color!)
- Mix well and enjoy!
