Healthy cookie dough smoothie bowl with protein, vitamins, and fiber!

Vegan and gluten-free friendly!
This cookie dough smoothie bowl is made with simple ingredients and this recipe is vegan and gluten-free friendly!
You can customize some of the ingredients to your liking like using Greek yogurt instead of coconut milk yogurt, but I decided to keep this recipe plant-based!
What kind of kitchen equipment do I need?
You just need two things! And you probably already have both of them!
1.) BLENDER
You can also use a bullet blender such as a Nutribullet, and the results will still come out great!

What makes this cookie dough smoothie bowl healthy?
For the smoothie bowl, I wanted to incorporate natural foods like banana, cauliflower, and oats to give this recipe nutrients, vitamins, and fiber!
BANANAS:
- Aid in muscle recovery (potassium is an electrolyte that helps your muscles recover after a workout!)
- Can help lower blood pressure and can help reduce the risk of heart attacks and strokes
- Good source of resistant starches (which help promote healthy bacteria in your gut!)
- Can help with bloating (potassium can aid in reducing your fluid retention!)

CAULIFLOWER:
- Great source of fiber (and when blended into a smoothie texture it adds a nice creaminess and thickness!)
- Amazing source of Vitamin C (77% of the daily recommended intake)
- High in antioxidants (antioxidants help protect our body from inflammation!)
- Anti-inflammatory properties that can help reduce the risk of cancer and heart disease

OATS:
- Great source of whole grains
- Good source of fiber (7.5 grams for 1 cup of dry oats)
- Can help lower bad cholesterol
- Rich source of manganese, magnesium, thiamine, and other vitamins and minerals

Healthy Cookie Dough Smoothie Bowl
Equipment
- food processor
- blender
Ingredients
For the smoothie bowl:
- 2 frozen banana
- 4 pieces frozen cauliflower
- 1 cup old-fashioned rolled oats gluten-free if desired
- ½ cup non-dairy milk
- ½ cup unsweetened coconut milk yogurt or any non-dairy yogurt
- 4 tbsp vanilla protein powder vegan if desired
- 2 tsp vanilla extract
- 2 tsp maple syrup
- 1 dash ground cinnamon
For the edible cookie dough:
- ½ cup chickpeas (Garbanzo beans) drained and rinsed
- ¼ cup finely-ground almond flour
- 2 tbsp almond butter
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1 pinch salt
- 3 tbsp chocolate chip vegan if desired
Additional (optional toppings):
- granola
- cacao nibs
- fruit
- nuts
Instructions
To make the smoothie bowl:
- Place all of the smoothie bowl ingredients in a high-powered blender and blend until completely smooth. There should be no lumps or large bits left.
To make the edible cookie dough:
- Place all of the cookie dough ingredients (minus the chocolate chips) into a food processor and pulse until everything is well blended and the texture is very smooth.
- Once the cookie dough is smooth and well-mixed, transfer the dough to another bowl and gently fold in the chocolate chips.
Assembling everything!
- Divide the smoothie into two bowls. Top with the finished cookie dough and any additional toppings you may want! Feel free to customize with fruits, nuts, granola, or anything else you may like! Enjoy!
