What is almond flour?
Almond flour is just like regular flour except it’s made from almonds instead of different types of grains such as wheat.
Because this recipe calls for almond flour and NOT all-purpose flour, these chewy, chocolate chip cookies are gluten-free and have lower carbs than typical chocolate chip cookies.
Not to mention, almond flour is also higher in fiber and healthy fats; and it’s even a great source of Vitamin E!

Giant, Chewy, Gluten-Free Chocolate Chip Cookies
Ingredients
- 1¼ cups plus 2 tbsp finely ground almond flour
- ¼ tsp salt
- ¼ tsp baking soda
- ¼ tsp baking powder
- 4 tbsp unsalted butter room temperature
- 1 tsp coconut oil solid
- 1 tbsp almond butter
- ¼ cup brown sugar packed, light or dark brown sugar works
- ¼ cup granulated white sugar
- 1 large egg
- 1 tsp vanilla extract
- chocolate chips to your liking
Instructions
- Preheat oven to 350° Fahrenheit and prepare a baking sheet with parchment paper.
- Using a silicone spatula, cream together the softened butter, dark brown sugar, and granulated sugar in a large mixing bowl until homogenous. Add in the coconut oil and stir to combine. Then, add in the almond butter and stir until everything is one smooth texture.
- Add in your egg and mix well. Afterward, add in the vanilla extract and stir until combined.
- Add in your dry ingredients (almond flour, salt, baking powder, baking soda) and stir until everything is well mixed and incorporated. Once everything is well combined, add in the number of chocolate chips you would like and stir.
- Evenly divide the dough into 6 cookies and mold them into a ball shape and place on the baking sheet. (These cookies spread a lot, so be sure to give them about 3-4 inches of space in between each other.) If you would like, you can sprinkle some extra chocolate chips on top!
- Bake at 350° Fahrenheit for about 13-14 minutes or until the edges are LIGHTLY golden brown.
- Remove from the oven and let the cookies set on the tray for 3-5 minutes before eating. Enjoy!
