Healthy, vegan, and gluten-free overnight oats perfect for breakfast!
Are overnight oats healthy?
I recently came across this blog post from Eat This, Not That that highlights some really cool benefits of overnight oats!
It turns out that eating oats in their raw form can help promote good bacteria in your gut! Raw oats are a great source of resistant starches that aid our gut bacteria health and keep things in check! So cool!
Whether you eat oats raw or cooked, they’re an excellent source of fiber which means they can help keep you fuller longer!
Does matcha powder have any health benefits?
“Matcha is high in an antioxidant EGCG, which is believed to have cancer-fighting effects,” according to TIME.
How long do I have to chill overnight oats?
For this recipe, I would recommend at least four hours in the fridge! This matcha overnight oats recipe is really quick and easy to prep the night before (literally takes less than 5 minutes), so it makes for the perfect breakfast by the time you wake up!
If you keep them in the fridge longer than four hours they’ll still be fine! I would set four hours as the minimum chill time though.
Substitutions
Unsweetened vanilla coconut milk yogurt – Feel free to use any other non-dairy yogurt alternative! If you’re not vegan, you can also use any regular yogurt! Greek yogurt also works great!
Agave – If you don’t have agave on hand, you can use pure maple syrup! If you’re not vegan, you can also use honey in this overnight oats recipe!
What kind of toppings go best with matcha?
Honestly, the toppings you choose to add are really up to your preferences! I personally think strawberries and matcha go very well together!
You can play around with different flavor combinations! Feel free to customize your matcha overnight oats with different nut butters, flax seeds, granola, nuts, dried berries, cacao nibs, or various types of fruit!
